Fire Wife's Kitchen - Homemade Pumpkin Pie

Homemade Pumpkin Pie (recipe credit here)












Ingredients:

1 Pie Pumpkin (Yes, that's the actual name of the pumpkin to use)

1 cup of sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 teaspoon of salt
4 large eggs
3 cups of pumpkin puree (How to make pumpkin puree to follow)
1 12-ounce can of evaporated milk (I used the fat free kind)


Directions:

  1. Rinse the outside of the pie pumpkin in warm water.
  2. Cut the pumpkin in half using a serrated knife in a sawing motion.
  3. Scoop out the seeds & the stringy insides. (I used an ice cream scoop to help with this)
  4. Remove the stem & place pumpkin (skin down) in a microwaveable container (with lid). Place 2-3 inches of water in bottom of container & cover. (I used a Pyrex casserole dish with lid)
  5. Place container in microwave & microwave on high for 15 minutes. Check for softness and reheat for 2-3 minutes at a time (stopping to check for softness). Total microwave time should take 20-30 minutes.
  6. Remove from microwave and allow to cool for 5 minutes. Then scoop the pumpkin 'meat' from the skin. (Be sure to allow pumpkin pieces to cool...I burned my fingers because I was impatient!)
  7. Puree the pumpkin meat using a food processor, a blender, or a hand blender until smooth.
  8. Preheat oven to 425 degrees.
  9. Mix all ingredients (listed above) with a hand mixer & pour into pie crust. (I cheated & used pre-made frozen pie crusts)
  10. Pumpkin pie mixture will be soupy/runny...but it WILL firm up during the cooking process.
  11. Cover edges of pie crust with aluminum foil to keep from burning.
  12. Bake at 425 degrees for the first 15 minutes; reduce heat to 350 degrees for the next 45-60 minutes.
  13. Check pie by placing a butter knife in the middle of the pie--if it is 'clean' when you slide it out, pie is ready!

EDITED TO ADD: Oh! One pie pumpkin made 2 pumpkin pies!

  3. Looks yummy, and I dont even LIKE pumpkin pie. I would try yours though, as yours is for sure better than anyone else's. Right? hehe. Hugs.
